Distinctive Tausug coffee service technique. Hot black unfiltered coffee is poured in a long stream from one glass held high (often head height) to a second glass held low; the transfer is repeated 3-5 times. Accomplishes three things simultaneously: cools the coffee without milk or ice, aerates and releases volatile aromatic compounds, and keeps grounds suspended evenly. Cognate techniques exist in Yemeni qishr service, Indian chai service, and Malay coffee traditions — Hain reads the Tausug practice as preservation of an Indian Ocean equatorial-climate cooling technique rather than local innovation.
